Meet a traditional Espadin from the Martinez family in Santa Maria Albarradas, Oaxaca, where mezcal-making goes back to 1943. The agave grows seven to eight years before it's roasted in a stone-lined earthen pit, crushed by tahona, fermented open-air in wooden tanks, and double distilled in small copper pots. Expect papaya and roasted fruit on the nose, then grapefruit skin, black pepper, and a long, tingling finish. A friendly everyday sipper, best neat, for newcomers and seasoned mezcal fans alike.
