Espadín mezcal from San Luis del Río, a remote village in Oaxaca, made by third-generation maestro mezcalero Gregorio Velasco. Agave grown at least six years, roasted four days in an earthen pit over hot stones, crushed under a stone wheel, fermented seven to ten days in wooden tubs, distilled in copper.
