Don Vicente's Extra Añejo comes from Destilería El Pandillo in Jalisco's Highlands, where Felipe Camarena—a sixth-generation agave farmer—rests his blue Weber agave spirit at least three years in used American white oak bourbon barrels. Expect cooked agave up front, then oak, ripe fruit, caramel, and butterscotch settling in, courtesy of a slow oxygenation process that keeps everything balanced. It's picked up gold honors on the competition circuit too. Pour it neat over one big ice cube, or stir it into an Old Fashioned.
