From Jalisco's Los Valles region, small-batch distiller Marco Antonio Jauregui Huerta (NOM 1450) cooks 100% blue Weber agave in a stone oven, crushes it on a roller mill, then double-distills in copper pots. This reposado rests six months in white American oak, coming out honeyed gold with cooked agave, caramel and vanilla on the nose, a buttery, peppery palate, and an earthy, warm finish. Pour it neat or build it into an oak-forward cocktail.
