Don Ramon's Punta Diamante Lavender starts with 100% blue agave, double-distilled, then takes a turn most blancos never do: a rest with lavender in wine barrels that lends it a soft rosy hue and a floral, gently citrusy lift. The lavender itself is steam-distilled from blooms grown near Valle de Bravo. Bottled at 40% ABV, it's lovely poured over a big cube or stirred into a springtime spritz.
