Don Pilar Reposado comes from a family-run distillery in the Jaliscan Highlands, where a father-and-son team still oversees small batches of 100% blue agave grown on their own ranch near San José de Gracia. Six months in virgin American white oak turns the spirit a soft amber, layering baked agave and citrus with light oak, caramel, and vanilla on the finish. It's mellow enough to sip neat in an old-fashioned glass, or shaken into a margarita for something a little richer.
