Here's a tequila with an unusual studio session behind it: at Don Pilar, the agave must gets serenaded with Baroque music through roughly 200 hours of fermentation, a quirk the distillery calls its Mozart Method. The agave is estate-grown blue Weber from the Highlands of Jalisco, double-distilled and left unaged. Expect a nose of lime, pineapple, and baked agave, a crisp, lightly sweet palate, and a clean citrus-zest finish. Lovely neat in a sipping glass, and just as at home in a bright margarita.
