Somewhere in the Jalisco highlands, this anejo's fermentation tanks get serenaded with Mozart, a genuine step in Don Pilar's process built on the idea that music aids sugar-to-alcohol conversion. Made from agave hand-harvested off the family's own highland ranches near San Jose de Gracia, it's double distilled and rested over 20 months in new American oak, developing a golden hue with toasted oak, butterscotch, and baked-agave depth.
