Don Mateo de la Sierra Pechuga Mezcal Artesanal comes from Michoacán's Rio Balsas region, made by sixth-generation maestro mezcalero Emilio Vieyra. Wild cupreata agave is pit-roasted, crushed, and fermented in wooden pits before a third distillation carries a cotton bag of fruit, spices, and meat — a family pechuga recipe from Emilio's mother, Doña Delia — through the copper-and-wood still. Expect tropical fruit, baking spice, and a whisper of smoked meat on the nose, with a rich, oily texture and a spiced finish. Best sipped neat, slowly, after a meal.
