Don Gato Blanco is unpretentious craft tequila distilled from mature lowland agave in Jalisco, made the old and new way — some agave crushed on stone tahona wheels, then run through copper pot stills, with nothing else added. The nose opens with fresh pear, lime zest, and cedar; the palate turns to grapefruit, coriander, and almond crème before finishing on spun sugar, clove, and brioche. It took gold at the San Francisco World Spirits Competition. Pour it over ice for a bright margarita, or sip it neat.
