Don Cayo's Extra Añejo spends five years resting in French oak in El Arenal, deep in Jalisco's Valley of Tequila — long enough for the 100% blue agave spirit to trade its vegetal edge for something closer to a well-aged brandy. Distilled at Tequilera Puerta de Hierro from agave slow-roasted in traditional stone ovens, it opens with caramel and vanilla, moves into cooked agave and honey butter, then settles into oak, maple, and a whisper of smoke. Pour it neat, or over one large cube.
