Here's a mezcal made the way it was two centuries ago: the Arellanes family has been distilling in Santa Catarina Minas, Oaxaca for eleven generations. Their Rustico starts with Espadin roasted over guamuchil and mesquite embers, ferments in pine vats on wild airborne yeast, then runs twice through clay pot stills — the old minero method. At 47% ABV, expect ash, roasted corn, and crushed walnut giving way to caramel and fresh herbs. Pour it neat and let the smoke settle.
