Eleven generations of the Arellanes family have distilled mezcal in Santa Catarina Minas, Oaxaca, and this Añejo is their patient side: espadín agave, earth-roasted over mesquite, double-distilled in ceramic clay pot stills, then rested at least eighteen months in ex-Pedro Domecq brandy casks. That time shows — baked stone fruit and grilled pineapple layer over smoky mesquite, finishing long and saline. Pour it neat, slightly warmed, like you would a good brandy.
