Largo isn't your usual espadin mezcal. It's built entirely from Karwinskii agave grown around Santa Catarina Minas, the Oaxacan village famous for its minero clay-pot tradition. The Arellanes family, eleven generations deep, earthen-roasts the maguey over guamuchil and mesquite, ferments in pine vats, and double-distills in ceramic pots at around 53% ABV. Expect candied lime, soft white flowers, and cool cucumber-skin green notes over a whisper of smoke and minerality. Pour it neat in a copita and take your time.
