From Santa Catarina Minas in Oaxaca, this mezcal is distilled entirely from wild Karwinskii "Largo" agave grown high in the hills. The Arellanes family earthen-roasts the elongated maguey hearts over guamĂșchil and mesquite wood, ferments it with bagasso in pine vats using native airborne yeast, then double-distills in ceramic pot stills. The result is fruity and candied on the palate, with a creamy texture, gentle spice, and a mild roasted finish. Pour it neat to sip slowly after dinner.
