Don Amado's Arroqueño mezcal starts with a rare, slow-growing maguey — some plants take up to two decades to mature — hand-harvested in the Oaxacan highlands of San Pablo Apóstol. The Arellanes family, distilling since the late 1700s, pit-roasts the agave for four days over guamúchil and mesquite before fermenting with wild yeast in pine vats and running it through ceramic pot stills.
