Don Amado's Arroqueño mezcal starts with a rare, slow-growing maguey — some plants take up to two decades to mature — hand-harvested in the Oaxacan highlands of San Pablo Apóstol. The Arellanes family, distilling since the late 1700s, pit-roasts the agave for four days over guamúchil and mesquite before fermenting with wild yeast in pine vats and running it through ceramic pot stills. Expect soft smoke, caramelized agave, and layers of chocolate, espresso, and stone fruit. Pour it neat to savor the craft, or alongside grilled meats and dark chocolate.
