Just a stone's throw from Corton's grand cru slopes sits Les Chaillots — its name literally means pebbles, a nod to the limestone, sand, and gravel underfoot. Louis Latour controls nearly all of this premier cru, working 35-year-old Pinot Noir vines rooted near Chateau Corton-Grancey. Open-vat fermentation and 10-12 months in French oak, about a third of it new, build layers of blackberry, forest floor, and licorice around a silky frame. Pour it with roast game birds or a wedge of aged cheese.
