Doce Mezcal is produced in Santiago Matatlán under Maestra Mezcalera, Margarita Blas. The spirit is handcrafted from 8 year, 100% Espadín Capón agaves that have reached peak maturity stage, giving it the maximum amount of flavor.After harvesting, the quiotes are removed and the agaves are left in the fields for three months to enhance the cultivation process. The piñas are then roasted for five days using a blend of pine and oak wood and crushed using the traditional tahona method.
