Most of what comes out of Dingle's distillery in County Kerry is whiskey and gin — vodka is the rare one, and it's made on a hand-beaten copper pot still they named Oisín. The grain spirit runs through quintuple distillation and charcoal filtering, then gets cut with well water drawn from deep below the distillery. Expect a clean, creamy pour with faint white pepper and aniseed. Sip it icy and neat, or let it carry a martini.
