Derrumbes doesn't bottle one mezcal — it bottles a map. Named for the landslides that shape Mexico's agave country, the project pairs each release with a different state, native agave, and maestro mezcalero, so no two Derrumbes taste alike. This Joven comes bottled straight off the still, unaged, carrying whatever the region gave it: stone-pit roasting in wood-fired hornos, traditional fermentation, and the light smokiness and mineral edge that method leaves behind. Pour it neat in a copita, or with citrus and salt to let the smoke unfold slowly.
