Jabali means wild boar, named for an agave so temperamental most mezcaleros won't touch it: it foams furiously during fermentation and has been known to wreck a still. In the village of Santa Maria Albarradas, Oaxaca, the hearts are earth-roasted, crushed by a horse-drawn stone, then twice-distilled over wood fire. The result is wonderfully odd: fresh figs and baked apple, a whisper of violet and tarragon, savory and bright at once. Sip it slowly, neat, and let it unfold.
