Tobalá is the wild one — a small agave that grows on its own in high mountain shade beneath oak trees, so tiny it takes roughly eight piñas to match a single Espadín. Del Maguey roasts it slowly over oak and distills in copper pot stills in Oaxaca, landing at 45% ABV.
