Tobalá is the wild one — a small agave that grows on its own in high mountain shade beneath oak trees, so tiny it takes roughly eight piñas to match a single Espadín. Del Maguey roasts it slowly over oak and distills in copper pot stills in Oaxaca, landing at 45% ABV. Expect a sweet, fruity nose that opens into ripe mango and warm cinnamon, with a long, remarkably smooth finish. Pour it neat and sip slowly.
