Deep in a steep Oaxacan valley south of the capital, palenquero Paciano Cruz Nolasco and his son Marcos still work San Luis del Río the old way: pit-roasted Espadín agave, tahona-crushed, fermented with wild yeast in wood, then twice-distilled in copper. The result is a fruity, citrus-bright mezcal with wisps of earthy smoke and a touch of clay, finishing soft and creamy at 47% ABV.
