Del Maguey's Pechuga sounds like a joke until you taste it: after two rounds through the clay pot stills of Santa Catarina Minas, Oaxaca, this Espadín mezcal takes an oddball third distillation where wild mountain apples, plums, and a whole raw chicken breast hang suspended over the still. The result is savory and layered, tropical fruit and cinnamon meeting woodsmoke and a faint umami broth note. Made only each December, when the wild fruit is in season. Pour it neat, slowly, in a wide glass.
