Del Maguey's Minero comes from Santa Catarina Minas, Oaxaca, where the Carlos family still cooks espadín agave in an earthen pit, hand-crushes it, and lets it ferment slowly and wild before running it through tiny clay stills fitted with bamboo tubing — a method distillers call "Filipino style." That process shows up in the glass as cracked pepper and smoked meat up front, softening into cranberry, lemon zest, and a mineral, clay-tinged finish. Sip it slow, neat, alongside something smoky or citrus-bright.
