Madrecuixe is a wild agave that takes its time: ten to fifteen years to mature in the hills above San Luis del Rio, Oaxaca. Del Maguey earth-roasts the piñas, crushes them by stone mill, ferments naturally in wooden vats, and double-distills in copper, the centuries-old way. The result is silky and medium-bodied, with green, herbal notes of alfalfa, tarragon, and fresh bamboo giving way to mango, pineapple, and a long, dry, dusty finish. Pour it neat and sip slowly.
