Roasted in an earthen pit horno carved straight into a granite hillside, this single-village mezcal from Del Maguey comes from Las Milpas, a remote Oaxacan village whose name means "the cornfields." Espadin agave is milled by a horse-drawn stone wheel, fermented with wild yeast in open wooden vats, and twice distilled in copper. Expect slate and minerals on the nose, then tropical fruit, citrus, lavender, and tarragon through a long, dry finish. Sip it neat, at room temperature, and let it open.
