Virgin oak in Scotch is a rare move, and Deanston leans right into it. This Highland single malt spends its early years in ex-bourbon barrels, then gets a 9-to-12-month finish in fresh American oak casks that have never held spirit before. The result is sweet and waxy, with lemon zest and barley sugar on the nose, candied fruit, vanilla toffee, and heather honey on the palate, and a lightly spiced, honeyed finish. Bottled non-chill-filtered at 46.3% with natural color. Lovely neat or with a drop of water.
