David Reyes has spent nearly three decades growing agave in the Jalisco highlands, and this blanco is the batch he kept for himself. It's made from just three things: 100% blue agave, agave yeast, and water, distilled at the certified-organic Integradora San Agustin (NOM 1547). The pinas slow-bake for at least 26 hours before a copper pot still, giving a crystal-clear pour with cooked agave, cinnamon, and a mineral snap. Sip it neat and let the agave do the talking.
