Sauvignon Blanc off Dalton's sunken Elkosh vineyard in the Western Galilee, a cold sink that stretches ripening out. The juice goes straight into clay amphorae and ferments on wild yeast, the vessel shape keeping lees in motion. Six further months in terracotta before spring bottling.
