Daftmill runs as a working farm in Fife, growing its own barley and drawing water from an on-site artesian well — a setup that ties every batch directly to the land it's made on. The Summer Batch vatting brings together first-fill bourbon and oloroso sherry casks, bottled at 46% ABV in a run of well under two thousand bottles, with the clean, grain-forward backbone typical of Lowland malts. Pour it neat after dinner and let it slowly unfold, one small-batch dram worth savoring.
Tasting notes
Nose: Lactic, fruity, farm like notes and grassy. A bit like having a raspberry – vanilla yogurt on top of a very wet ball of hay, or something. Quite restrained, even a bit closed and definitely less outspoken on farmyard notes than my previous encounters with Daftmill.
Taste: Nice, full, lactic creamy arrival. An earthy, limestone, chalk like element alongside hints of grass and again the farmyard element. Notes of coffee and treacle with perhaps a bit of wood charr to it. Medium full, dry mouthfeel.
Finish: Quite long, becoming increasingly woody and drying
