Here's a blanco with a twist: instead of resting in wood, this one gets infused with pieces of cooked blue agave, so all that faint golden color and depth comes straight from the plant itself. The blue agave grows in the Jalisco highlands and cooks in a masonry oven, and the pour leans into floral, citrus notes with plenty of agave character, a whisper of baking spice, honey, and stony minerality.
