High in the hills above Santiago Matatlan, Oaxaca, mother-son distillers Margarita Blas and Carlos Mendez Blas coax this mezcal from wild Tobalá agave that takes 12 to 15 years to mature. The plant is cooked in a stone-lined conical pit, crushed by tahona, and run twice through copper stills at 47% ABV. Expect green pepper and peppercorn on the nose, cinnamon and orange zest on the palate — a spirit built for slow sipping neat, alongside grilled street corn or dark chocolate.
