Cirial is one of Oaxaca's rarest agaves — a towering karwinskii variety few distillers bother growing because it takes so long to mature. Mother-son team Margarita Blas and Carlos Mendez Blas roast it in earthen pit ovens in Santiago Matatlán, crush it under a stone tahona, ferment it wild in wooden vats, then run it twice through copper pot stills. At 47% ABV, it opens with bright fruit and lilac before settling into dry smoke and a long earthy finish. Pour it neat, slowly.
