Covenant's Black Label Cabernet Sauvignon is a small-lot, 100% Cabernet Sauvignon from Napa Valley, made by the Morgan family's Covenant Winery in Berkeley, California. The brand ferments it with native, indigenous yeast and lets it go through natural malolactic fermentation, then ages it 18 months in French oak, half of it new. It's bottled unfiltered and unfined, showing ripe, soft tannins around a fruit-forward core layered with herb and spice notes. Pour it alongside grilled steak or braised short rib to match its structure and spice.
