Copalli's White Rum comes from a single estate deep in Belize's rainforest, where heirloom Noble Cane — descended from stalks growing wild since 1848 — gets pressed within hours of cutting, fermented with rainwater and non-GMO yeast, then run through both pot and column stills. Nothing else goes in. Rested unaged in steel at 42% ABV, it pours fresh and grassy, with toffee, white pepper, and a citrusy grapefruit-zest lift. Pour it in a daiquiri, or keep it simple over ice with soda and lime.
