Overview

Cook's has been pouring American bubbles since 1859, one of a handful of U.S. sparkling wines grandfathered in to legally call itself Champagne. Its résumé includes FDR's 1939 birthday ball at the Waldorf Astoria, where it was the sole domestic bottle on the table. This Extra Dry, made in Ripon, California, keeps things easy: Prosecco-style, crisp, light citrus and floral notes settling into slightly sweet pear and apple. At 11.5% ABV, it's a natural for sushi night, a salad course, or grilled chicken — nothing fussy, just good bubbles.
