Here's a mezcal with a story you can see: Convite Una' pours a soft pink, naturally tinted with cochineal. It's made from Espadin agave aged 8-plus years in San Baltazar Guelavila, Oaxaca — the so-called Cradle of Mezcal — then naturally fermented with spring water and double-distilled in copper stills. Expect a herbal, citrusy sip with a light, sweet-mineral touch and gentle smoke. Pour it neat at room temperature and let it open up slowly. A share of every bottle supports FUCAM, a Mexican breast cancer charity.
