Cobalto Añejo comes from a small organic operation in El Arenal, Jalisco, where the distillery grows its own Blue Weber agave and lets fermentation run its own slow course, five to nine days, no shortcuts, no additives. Eighteen months in American oak brings out roasted agave, vanilla, dark chocolate, and caramel on the nose, with cinnamon, walnut, and dried fruit settling in on the palate. It's a patient, chemical-free añejo built for slow sipping, pour it neat in a rocks glass and let those oak-and-agave layers unfold.
