Te Koko is Cloudy Bay's boundary-pushing take on Marlborough Sauvignon Blanc. Sourced from old-vine parcels on the gravelly floor of the Wairau Valley, it's fermented with indigenous wild yeasts in French oak — mostly seasoned barrels — then rests on lees for around fifteen months, with partial malolactic fermentation softening the edges. The result is a smoky, textured white with pithy grapefruit, a touch of wax and gunflint, and a long mineral finish, worlds apart from steel-fermented Sauvignon Blanc. Pour it alongside roast chicken or pan-seared fish.
