Lune d'Argent comes from a Bordeaux estate wedged between two storied Sauternes properties, using vines usually destined for dessert wine to make something bone dry instead. The blend runs 70% Sémillon, 30% Sauvignon Blanc, hand-picked and pressed slow with no maceration, so the fruit stays lifted, not heavy. Expect citrus and linden blossom up front, mango and lychee underneath, with a saline finish. Pour it with oysters, or roast chicken and herbs.
