Most white rum starts with molasses. Clément starts with fresh-cut sugarcane, pressed into juice the same day it's harvested, then fermented in open-air vats before a quick pass through the still — the hallmark of Martinique's AOC agricole method. The result is a green-label rum with a sweet, vegetal nose (hints of black tea), a soft palate of fresh-cut grass and green beans, and a finish that drifts into citrus and white flowers. Traditionally poured Ti'Punch-style, with cane syrup and a squeeze of lime.
