Most rum starts with molasses. This one starts with fresh Martinique sugarcane juice, the hallmark of rhum agricole and the reason it carries the strict AOC Martinique designation. From Rhum Clement, a house founded in Le Francois back in 1887, it spends 15 years aging in the tropics in ex-Bourbon barrels. Expect a dark mahogany pour with bittersweet chocolate and mocha on the nose, then fig jam, dried spice, and roasted nuts. Pour it neat in a snifter and take your time.
