Named for the sahumerio, a vessel Mayan communities once burned offerings in to honor the goddess Chantico, this El Salvadoran rum from Licorera Cihuatán blends four batches aged 12 to 14 years in ex-bourbon casks. Master blender Gabriela Ayala built the profile to echo that ritual's smoke and gifts: incense, honey, cacao, dried apricot and myrtle layered over sweet, nutty depth. Bottled at 90.4 proof and hand-numbered as part of a limited run. Pour it neat in a rocks glass and let the aromas unfold slowly.
