El Salvador's only commercial rum house makes this one an homage to Tlaloc, the Mayan god of rain — indigo dye once conjured the same blue from the añil flower. Master blender Gabriela Ayala ages the molasses spirit eight years in ex-bourbon barrels using a solera system, landing at 40% ABV with layers of vanilla, cappuccino, dark chocolate, hazelnut, and dulce de leche. Sip it neat or over one big cube to let the lemongrass finish unfold.
