Cierto's blanco comes from fourth- and fifth-generation agaveros Enrique Fonseca and Sergio Mendoza, who hand-select estate-grown agave from Jalisco's mineral-rich Atotonilco Highlands. No shortcuts here, just water, yeast, and agave, double-distilled in copper pots and column stills, then rested months in stainless steel before bottling.
