Château Saint Corbian is a Bordeaux red blend from Saint-Estèphe, in the northern Médoc, made from an even split of Cabernet Sauvignon and Merlot. The small estate is tied to the Anney family's Château Tour des Termes, aging in the same cellars and under the same winemaking hand. Expect deep purple color, layered aromas of cassis and black cherry, and a palate of ripe dark fruit, silky tannins, and a long finish touched with licorice and roasted coffee. Pour it alongside braised short ribs or aged hard cheese.
