Château Piada is a Sauternes from Barsac, Bordeaux, built almost entirely from Sémillon grown on Barsac's limestone plateau above the Ciron River — terrain that invites the noble rot (botrytis cinerea) responsible for this style's concentration. The estate ferments and ages the wine in French oak, yielding a glass of honeyed apricot, quince, acacia, and candied citrus with a round, textured finish rather than pure sweetness. Serve chilled alongside foie gras, blue cheese, or fruit tart, or simply on its own as a slow-sipping dessert pour.
