Château Haut-Filius is a Saint-Émilion Grand Cru red blend from Bordeaux, France, produced on the appellation's southern slope near Château Angelus and owned by the Querre family. The blend leans heavily Merlot (roughly 80%), rounded out with Cabernet Sauvignon and Cabernet Franc, fermented in temperature-controlled steel tanks before 12 months' aging in wood. Expect a brilliant ruby color with violet, red-fruit, licorice, and black pepper notes, plus a smooth, spice-accented finish. Pour it alongside grilled or braised red meats and aged cheeses.
