Named for Charles Goodnight, the Texas Panhandle cattleman who blazed the Goodnight-Loving Trail, this small-batch bourbon leans into its home state's climate rather than fighting it. A high-rye mash of 60% corn, 36% rye, and 4% malted barley rests six years in new charred oak, where Texas heat swings push the whiskey harder into the wood than gentler climates allow. The result lands at 115 proof, with caramel, toasted hazelnut, and baking-spice notes. Pour it neat in a rocks glass to let the spice unfold slowly.
Tasting notes
Nose: Begins with tree fruits – apricots, peaches, and nectarines, giving way to toasty oak notes of caramel, brown sugar and sweet vanilla and just the memory of dark chocolate. On a third pass, notes of bright citrus-orange and lemon zest, with white pepper spice and just a hint of dried fruits-raisins and figs.
Palate: A very viscous, almost creamy texture that dries out beautifully revealing caramel and honey sweetness, cream soda, toasted nuts, dark chocolate, and baking spices.
Finish: Medium-long, with a lasting reminder of toasted hazelnuts and a touch of honey sweetness.
